I got this for fruit, herbs and some tuna tar tar from time to time. I have to admit it does a nice job at keeping the fruit and herbs bright natural colors. So it does work well for what I intended. It is extremely light (even lighter than maybe I even expected). It seems very fragile but I have seen others mentioned it is very durable if used properly. Perhaps Kyocera Damascus line would be a better choice if working in a professional kitchen (as I do), but they are very pricey. Personally I still prefer Japanese steel over this (or even good German steel) if I am going to pay those prices. The handle which is very light (plastic, which I am not a fan of) actually impressed me. Nice design. I will end up using this for what I had basically intended it for, herbs and some soft fruits.

All in all I would tell home cooks give it a try or if you want a knife to cut herbs and soft fruit with in a professional kitchen get it now while they have the 25th anniversary special going on, other wise it’s not really worth it because you aren’t going to use it for much more and who knows if you have your all purpose knife out already you may not what to go in your bag.
